In truth, at ERITA, we don't need to choose specific times to cook it. Its flavor, as intense as it is light (a bit like us!!), makes this mousse the delicacy that we love to enjoy without moderation,... all year round.

MOUSSE · CHOCOLATE

For 6 people

We need....

  • 5 large, preferably organic eggs
  • 225g of finely chopped 64% cocoa dark chocolate (or less intense according to your taste)
  • 1/2 cup strong espresso, freshly brewed
  • 2 pinches of fleur de sel (optional)
  • 1 teaspoon cocoa nibs for decoration (optional)

Here we go...

1 🍋 First, prepare a strong, strong espresso. Set it aside until it cools slightly.

2 🍋 Meanwhile, separate the whites from the yolks.

3 🍋 Melt the chocolate: In a heatproof bowl, melt the chocolate in a bain-marie, stirring gently to obtain a shiny and silky texture.

Tips: Let the chocolate cool completely to successfully complete the following steps.

4 🍋 Add the espresso to the melted chocolate, then add the egg yolks one by one, mixing gently. The magic begins here – each movement brings a divine sweetness to your mixture.

5 🍋 Meanwhile, beat the egg whites until stiff: In another bowl, whisk the egg whites until stiff with a first pinch of fleur de sel. Your whites should be firm and shiny.

Caution: This step is crucial to bring lightness and creaminess to your mousse. Take your time, each whipping will bring you a little closer to perfection.

6 🍋 Once ready, fold the egg whites into the chocolate. Using a spatula, gently fold the egg whites into the chocolate mixture. Go slowly, lifting the mixture from the center to the edges of the bowl.

The goal is to keep as much air as possible for an airy and voluptuous mousse.

Tips: Incorporate a third of the egg whites fairly quickly to soften the chocolate mixture and then more easily incorporate the rest of the egg whites.

7 🍋 Once these steps are completed, we then divide the mousse into pretty cups or into a large dish for a more convivial tasting.

Tips: Before spreading the airy preparation in its final dish, you can (or not) incorporate the second pinch of fleur de sel to subtly bring relief and contrast to your recipe. For us, it's just what you need
to enhance the chocolate!

7 🍋 This is the crucial moment of waiting. Let your mousse rest in the refrigerator for at least 6 hours.

Optional: Just before serving, sprinkle your mousse with a teaspoon of cocoa nibs for an irresistible and unexpected crunch. For a touch of sophistication to the tasting, simple to add.

Tips: This mousse can be prepared the day before for the next day or in the morning for the evening. Easy to fit into your schedule.
